Perogi Prince X Big Tree
Chef Adam Maciejewski brings a modern perspective to the comforting flavors of Polish cuisine with his pop-up concept, Pierogi Prince. Drawing inspiration from his Polish heritage and years spent cooking in professional kitchens, Adam reimagines traditional dishes through a seasonal New England lens. At the heart of the menu are handmade pierogi crafted with flour imported from Poland, honoring the techniques and ingredients that define this beloved staple.
Adam’s culinary journey has taken him through kitchens in New York City as well as restaurants in New England, where he developed a deep appreciation for ingredient-driven cooking and thoughtful hospitality. Now based in Portland, Maine, he brings that experience together with his heritage to create food that feels both nostalgic and contemporary.

Chef Brent Foster reimagines flavors from his childhood in the Midwest to create refined, seasonal cuisine rooted in nostalgia at his pop-up concept, Husky Boi. Join us for a five course meal designed for sharing -- bring a friend, a lover, or someone you just met.
Foster's Culinary journey stretches from Detroit to field kitchens across the country, where he has managed and cooked for farm-focused dining events with Outstanding in the Field and Secret Supper. Along the way, he met Ariel Knoebel, food writer and professional host. They now call Portland home, and pull from Maine's abundant pantry to create immersive culinary experiences that celebrate the region's rich agricultural landscape.

Ring in the New Year with our festive New Year’s Brunch at 685 Congress Street in Portland! Join us for a celebratory brunch gathering featuring our full NYE brunch spread.
The menu includes; Oysters, Little Spruce Bakery Pastries, Bagles & Lox, Pancakes, French Toast, Savory Breakfast Items and more!
Adult tickets are $75 (plus fees) per person and include access to our complete New Year’s Eve brunch menu plus one alcoholic beverage to kick off the celebration. Kids tickets are $30 each, making it a fun and welcoming event for the family.
A full cash bar will be available throughout the event, along with special add-ons for purchase, including options like caviar to elevate your brunch experience. Come eat, drink, and celebrate the year ahead with us!
